THE GLENEAGLES HOTEL AND DOM PÉRIGNON ANNOUNCE THE CELLAR X DOM PÉRIGNON

The Gleneagles Hotel and Dom Pérignon are embarking on a landmark partnership, which will see the creation of The Cellar x Dom Pérignon, an intimate, elevated dining and tasting experience inspired by terroir, heritage and a shared sense of place.

 

The Cellar x Dom Pérignon invites guests to experience the sensory pleasures of terroir through flavour, creativity and good company. The signature Dom Pérignon Experience centres on a five‑course culinary journey for up to twelve guests, created by the expert chefs at Gleneagles. Each dish, has been carefully composed using ingredients that showcase the bounty of Scotland’s larder, with a focus on exploring Perthshire’s unique terroir and beyond, all harmoniously paired with a curated selection of Dom Pérignon cuvées.

Housed behind the scenes at Gleneagles, The Cellar remains a working space within the hotel, an area that has served a historic role at Gleneagles as the point of storage and aging for rare and fine wines and spirits for over 100 years. A century ago, trains travelled north carrying Londoners in search of summers of countryside pursuits by day and long, glamorous evenings. They brought precious cargo, lowered by hand into the cellar below. In this new evolution of the space, The Cellar has been transformed into a stunning dining destination.

 

Nestled amongst Gleneagles’ vast collection of Burgundy, Bordeaux and Super Tuscans is a truly unique private dining room, enhanced with the finest fixtures and fittings. Champagne cabinets, fitted within bespoke wooden cabinetry ensure that Dom Pérignon is kept at just the optimal temperature for aging and drinking. Dom Pérignon’s birthplace, the Abbey of Hautvillers in Epernay, has been reflected throughout the exceptional design details, including a custom-made travertine dining table, reflecting the chalk, clay and limestone soils found in the famed region. The table is so vast, it was delivered by crane in two pieces, utilising the old service hatch last used for unloading bottles from delivery trains in the 1920s and 30s.

 

In addition to the full dining experience, guests can explore a unique library showcase featuring more than 40 Dom Pérignon rarities, offering insight into the evolution, craftsmanship and creative vision that has defined the Maison across decades. Whether guests wish to enjoy a vertical tasting or sample vintages from landmark years, bespoke tastings can be curated within The Cellar.
