A globally experienced culinary leader with nearly two decades of luxury hospitality experience, Cavicchini will oversee the culinary vision and operations of Joan, The Observatory Sun Valley’s signature all-day American restaurant, bringing a refined yet approachable perspective rooted in seasonal ingredients and destination-driven dining.
Born and raised in Italy, Cavicchini has built an impressive career across some of the world's most renowned luxury resorts and restaurants. Most recently, he served as Executive Chef & B at CordeValle, the celebrated Northern California resort where he led culinary operations across multiple outlets, including the fine dining restaurant Il Vigneto. There, he championed a locally focused culinary philosophy and developed menus centered around organic ingredients from California farms and producers.
Prior to CordeValle, Cavicchini served as Executive Sous Chef at the Forbes Five-Star and Michelin recognized Rosewood Miramar Beach in Montecito, California, where he helped oversee the resort’s diverse dining venues and events programming. His luxury hospitality experience also includes leadership roles at Four Seasons Resort Maui at Wailea, where he served as Chef de Cuisine of Ferraro’s Bar e Ristorante, one of Hawaii’s premier Italian dining destinations.
Throughout his career, Cavicchini has earned a reputation for creating thoughtful culinary experiences that balance technical excellence with a strong sense of place. His expertise spans fine dining, large-scale events, wine-focused programming, and luxury resort operations, making him uniquely positioned to shape the dining experience at The Observatory Sun Valley.
At Joan, Cavicchini will lead a culinary program inspired by the legacy of Joan Blank, a beloved Ketchum local known for bringing people together through warmth, curiosity, and music. Designed as the social heart of The Observatory Sun Valley, Joan will blend mountain ease with impeccable hospitality, inviting guests and locals alike to slow down, connect, and savor the moment.
